You should be proud after all the complaining, 2nd guessing and worrying my Dad is officially an indirect heat convert lol. The Tucker actually over smoked a couple of butts (easy fix we just need to foil them after about 8hrs) and it was by far the best and easiest day of cooking we've ever had. The over smoking might have been our own doing since we experimented with a mix of about 80% charcoal and 20% water soaked Oak and Pecan.

We (especially Dad, who's opinion mattered most here) have nothing but praise for the way our Tucker handled on its maiden voyage. It turned out the best ribs I've done yet, the smoke ring actually goes all the way through the rib and they taste awesome. The pork loins are nothing short of perfect and are the juiciest we have turned out.

In fact the only thing either of us could even think to wish for was that the Tucker was just bigger to hold the large quantities we want to turn out lol. So you can expect us to be buying at least one more of the Professionals but we will gladly be the first in line for your Commercial cooker. Tell everyone else the line starts behind us lol.
